Black Bean Salad (Recipe)

Black Bean Salad (Recipe)

Ingredients

For the salad

  • 2 cans black beans, drained and rinsed
  • Romaine Lettuce (or preferred lettuce), chopped
  • 1 1/2 cups corn, fresh or frozen
  • 1 red bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 medium avocado, pitted and diced
  • 1/2 cup cilantro, chopped

For the dressing

  • 3 Tbsp extra-virgin olive oil
  • 1/4 cup fresh lime juice
  • 1 tsp lime zest
  • 2 cloves garlic, minced
  • 1/2 tsp cumin
  • 1/4 tsp chili powder
  • 1/4 tsp onion powder
  • 1/2 tsp kosher salt
  • Pinch of red pepper flakes

Instructions

  • 1.  In a large bowl, mix together black beans, corn, red bell pepper, red onion, avocado and cilantro; set aside.


  • 2. To make the dressing, whisk together lime juice, lime zest, olive oil, garlic, and seasonings. Drizzle over black beans and corn mixture and toss well to combine.


  • 3. Cover and chill salad in the fridge for at least one hour before serving.
